做法(fǎ ):洗净(jìng )宰好鲫鱼(yú ),洗净淮(huái )山(shān )和薏(yì )米。用清水把(bǎ )陈(chén )皮泡软,拍裂一(yī )小块姜,热锅(guō ),用姜块(kuài )在锅上擦一遍,放(fàng )两勺油,待油六成(chéng )热下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲(bāo )里的(de )清水,放入煎煮好(hǎo )的(de )鲫(jì )鱼(yú )和其他材(cái )料,武火煮沸,转中(zhōng )小火(huǒ )煲一(yī )个(gè )半(bàn )小(xiǎo )时,下盐调味即可品尝(cháng )。
