做法:春笋切成片后加(jiā )少许(xǔ )盐(yán )捞出后用清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒(dǎo )入(rù )2勺(sháo )油,放(fàng )入(rù )生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒(chǎo )1分钟(zhōng )左(zuǒ )右。再加(jiā )入(rù )生(shēng )抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火(huǒ )煮开(kāi )后转中火。煮到水快(kuài )熬(áo )干的(de )时候加入盐(yán ),翻(fān )炒(chǎo )均匀稍收汁时盖(gài )上(shàng )锅盖(gài )焖(mèn )。
