做法(fǎ ):春笋切(qiē )成片(piàn )后加少(shǎo )许盐(yán )捞出(chū )后用清水浸泡,生(shēng )姜(jiāng )切片(piàn ),葱(cōng )切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入(rù )少量清(qīng )水半(bàn )掩住春笋,盖(gài )上锅盖大(dà )火煮开(kāi )后(hòu )转中火。煮(zhǔ )到水快熬(áo )干的(de )时(shí )候加(jiā )入盐,翻炒(chǎo )均匀(yún )稍收(shōu )汁时(shí )盖上锅盖(gài )焖。
