做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮山和(hé )薏米。用(yòng )清水把陈皮泡软(ruǎn ),拍裂(liè )一小(xiǎo )块姜,热锅,用姜块在锅上(shàng )擦(cā )一遍(biàn ),放(fàng )两(liǎng )勺油(yóu ),待油(yóu )六(liù )成(chéng )热(rè )下(xià )鱼(yú ),煎至微黄(huáng )。煮沸瓦煲里(lǐ )的(de )清水,放(fàng )入煎(jiān )煮(zhǔ )好的(de )鲫鱼和其他材(cái )料,武火(huǒ )煮沸,转中(zhōng )小火(huǒ )煲一个半小时,下盐(yán )调味即可品尝。
