做(zuò )法:洗净宰好鲫鱼,洗净(jìng )淮山和薏米。用(yòng )清水(shuǐ )把陈(chén )皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜(jiāng )块在(zài )锅上擦一遍(biàn ),放两勺(sháo )油(yóu ),待油六成热下(xià )鱼,煎(jiān )至(zhì )微黄。煮(zhǔ )沸瓦(wǎ )煲(bāo )里的清水,放(fàng )入煎煮好的鲫(jì )鱼和其他(tā )材料(liào ),武火(huǒ )煮沸,转中(zhōng )小(xiǎo )火(huǒ )煲(bāo )一个(gè )半(bàn )小时,下盐调味即可(kě )品尝。
