做法:春(chūn )笋切成片后加少(shǎo )许盐捞出(chū )后(hòu )用清(qīng )水浸(jìn )泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热(rè ),倒(dǎo )入(rù )2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再(zài )加入(rù )生(shēng )抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入(rù )少量清(qīng )水半(bàn )掩(yǎn )住春笋(sǔn ),盖上锅盖(gài )大火(huǒ )煮(zhǔ )开后转(zhuǎn )中火(huǒ )。煮到水快熬(áo )干的(de )时候(hòu )加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅盖(gài )焖。
