做法:洗净(jìng )宰(zǎi )好(hǎo )鲫(jì )鱼(yú ),洗净淮山(shān )和(hé )薏米。用清水(shuǐ )把陈皮泡(pào )软,拍裂一(yī )小(xiǎo )块(kuài )姜,热锅,用(yòng )姜块在锅上擦(cā )一遍(biàn ),放(fàng )两(liǎng )勺油(yóu ),待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼(yú )和(hé )其他材料,武火(huǒ )煮沸,转(zhuǎn )中小(xiǎo )火煲一个半小时,下盐(yán )调(diào )味即(jí )可品(pǐn )尝。
