做法:洗净(jìng )宰(zǎi )好(hǎo )鲫鱼,洗净淮山和薏(yì )米(mǐ )。用清水把陈(chén )皮泡(pào )软,拍(pāi )裂一(yī )小(xiǎo )块姜,热锅(guō ),用姜(jiāng )块(kuài )在锅(guō )上擦一遍,放(fàng )两(liǎng )勺油,待(dài )油六成热下鱼(yú ),煎至(zhì )微黄(huáng )。煮沸瓦煲里(lǐ )的清水,放(fàng )入煎(jiān )煮(zhǔ )好的鲫鱼(yú )和其他(tā )材料,武(wǔ )火煮沸,转(zhuǎn )中小火煲一个半小时,下盐(yán )调味即可品尝。
