做(zuò )法:春笋切(qiē )成片后加少许(xǔ )盐(yán )捞出后(hòu )用(yòng )清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入(rù )2勺(sháo )油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分(fèn )钟左右(yòu )。再(zài )加入(rù )生(shēng )抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快(kuài )熬干的时候加(jiā )入(rù )盐,翻炒均(jun1 )匀(yún )稍收汁(zhī )时盖上锅盖焖。
